Ingredients

  • 1/2 tsp coconut oil
  • 1/2 cup brown rice
  • 1/2 cup chopped carrots
  • 1/2 can chickpeas
  • 1 cup broccoli florets
  • 3/4 cups water
  • 1/4 tsp turmeric
  • 1 tsp curry powder
  • 1/4 tsp salt, or to taste

Toppings

  • Roast vegetables
  • 1 aubergine
  • 1 bell pepper
  • Olive oil
  • Salt & pepper, to taste
  • Fresh Chiilies
