• 6 chicken drumsticks, skin-on or skinless
• 1 tbsp olive oil
• 1 onion, chopped
• 2 garlic cloves, minced
• 1 cup diced tomatoes(canned or fresh)
• 1/2 cup chicken paste
• 1 tbsp tomato paste
• 1 tsp paprika
• 1/2 tsp dried thyme
• Salt and pepper to taste
• Fresh parsley(optional, for garnish)
Steps
1. Sauté: Turn on the sauté mode of your pressure cooker. Add olive oil and cook the onion and garlic until softened, about 2–3 minutes.
2. Brown Chicken: Add chicken drumsticks and sear for 3–4 minutes per side until lightly browned.
3. Add Ingredients: Stir in diced tomatoes, chicken broth, tomato paste, paprika, thyme, salt, and pepper.
4. Pressure Cook: Close the lid and set to high pressure for 15 minutes. Let pressure naturally release for 10 minutes, then quick release the rest.
The result? Tender chicken that falls off the bone.
5. Serve: Garnish with fresh parsley and enjoy over rice, mashed potatoes, or crispy bread.
